Stir-Fried Chicken Breast, Mangoes & Broccolis with Rice

Now that you're home for the holidays, take advantage of those fresh vegetables and prepare yourself a festive holiday meal!  This CAISA Favourite is full sure to satisfy all of your taste buds with succulent mango and tender chicken.

Time to Prep: 10 Minutes
Time to Cook: 8 Minutes
Servings: 4

Ingredients:

½ Cup Cubed Sliced Oven Roasted Seasoned Chicken Breast Cutlets
1 1/2 Cups Chopped Broccolis
1 Cup Cubed Mangoes
2 Cups Cooked Rice
Salt, Pepper to Taste

Directions:
1. Peel and cube mangoes (about 1/4 inch in size).











2. Chop broccolis into tiny florets.












3. Cook chicken breasts in microwave according to directions on package. Cube cooked chicken breasts (about ½ inch in size).










4. Spray pan with oil and turn stove to medium-low heat. Wait for it to heat up.













5. Add broccolis into pan, and mix occasionally for about 3 minutes.

6. Add mangoes into pan, and mix occasionally for about 2 minutes.


7. Cook the chicken breasts in the pan for 2 minutes and add salt and pepper to taste.  Add some Tabasco sauce for an extra kick!












9. Serve the stir-fry with cooked rice.
